In all this humidity I have been waking up with a puffy, tired-looking face many mornings. To reduce inflammation and energize myself, I've been increasing the amount of anti-inflammatory foods I'm consuming. Pineapple, turmeric, and ginger have long been known to have these properties. I really enjoy adding super foods like beet juice, blueberry juice, or coconut oil to my morning coffee. But what about trying an energy boosting fruit drink that'll still give you the warm and cozies? You can add a shot of espresso this, by all means. It will taste fabulous and give you that extra kick.
One of the best things about this drink is the foam. The froth is incredibly bountiful and dense, thanks to the pineapple. I used to have an electric froth/whipper machine from Nespresso but without it I haven't been able to achieve a dense foam. Even with it, it can be a challenge to whip rice or oat milk. The beauty of this froth is that it doesn't require a frother; just a blender or Magic Bullet for delightfully dairy-free latte foam.

Ingredients
1/3 cup chopped pineapple
1 tsp fresh ginger, peeled
2 tbsp. lemon juice
1/2 cup coconut milk
3/4 cup water
1 tbsp. maple syrup
a pinch of cinnamon
1/4 tsp turmeric
Add all the ingredients to a blender and pulse until smooth and frothy.
Transfer to a small sauce pan and simmer on medium low heat until steaming, about 5 - 7 minutes. Sprinkle a little cinnamon on top for garnish and enjoy!,
