Homemade Pita Bread
We used one of Jamie Oliver's recipes for homemade pita bread. Mix 1 cup flour, 1 cup vegan coconut milk yogurt, a pinch of salt, and 1 tbsp baking soda in a large mixing bowl until it comes together into a ball. Knead until it's a nice lump of dough. Divide the dough into 6 pieces. Roll each one into a ball and then pat out into a flat pita shape. Toast in a hot pan (no oil) until golden brown.
Black Bean Burger
Rinse a can of black beans and toss in the blender along with the juice of one lime and 1 egg. Blend it up! Pour the blended beans into a mixing bowl and add a pinch of salt, a handful of chopped cilantro, one clove of garlic finely chopped, and about 1/2 cup of panko (remember to read the label!). Mix well and then form into patties about the same size as your pita bread. Fry in a non-stick pan for about 2 or 3 minutes on each side, or until golden brown. We fried ours in sunflower oil but you can also use canola.
Assembly
Top a pita with 2 bean burgers, a drizzle of mayo (be sure to read the label, we use a brand that is free from dairy, nuts, and peanuts), some corn, diced red pepper, and more cilantro.
