Some salads are so naturally gorgeous, it’s hard to believe they take almost no effort at all. What I love about this heirloom carrot salad recipe is that the beauty of the carrots is showcased so well, and is just accented by a light dressing and fresh herbs. Pair it with fish, roasted chicken, or a vegetarian bowl.
Free from: peanuts, nuts, dairy, soy, egg, wheat fish, shellfish. Gluten-free, vegetarian
Alternatives: you can do this with regular carrots if heirloom carrots are not available. The hemp seeds can be omitted if you have a seed allergy
Ingredients
3 large heirloom carrots (preferably one orange, purple, and white)
1 tbsp fresh cilantro leaves
several fresh mint leaves, torn (2 - 3)
1 tbsp lime juice
1 tbsp olive oil
1 tsp honey
salt and pepper to taste
1 tsp shelled hemp seeds
Shave the carrots with a vegetable peeler. I know this sounds daunting but it really only takes a couple minutes. Add to a bowl with the fresh herbs.
Mix the lime, olive oil, and honey in a small bowl. Pour over the salad and toss well, fluffing up with a fork to preserve the lightness of the carrot ribbons. Sprinkle the hemp seeds over top and season with salt and pepper to taste.
