Gluten-free, vegan
I/2 head of fennel, thinly shaved
roughly 1/3 of a cucumber, thinly shaved
1/4 cup finely chopped dill
coarse salt and freshly ground black pepper, to taste
1 tbsp cider or white wine vinegar
2 tbsp olive or avocado oil
Toss all the ingredients together and serve immediately
