In this post I'‘m sharing two simple recipe for seasonal overnight oats that are dairy-free, nut and peanut free, egg-free, soy-free, gluten-free… good for nearly everyone! Pumpkin and apple pie are among my favorite fall flavors, so what better way to enjoy them all week long with a healthy breakfast recipe.
Apple Pie Overnight Oats
Free from peanuts, nuts, dairy, soy, egg, gluten, fish, shellfish
Alternatives: use instant quinoa oats instead of traditional oats
Ingredients
3/4 cup gluten-free instant oats
1/4 tsp cinnamon
1 tbsp. maple syrup
1/3 cup peeled, cored, and diced apple (about 1 apple)
3/4 cup coconut drink, such as Coconut Dream
Add all the ingredients to a glass container and mix well. Put the lid on and refrigerate overnight. Enjoy in the morning, either chilled or warm. To warm, either microwave for 45 seconds or heat in a small sauce pan for several minutes.

1 tbsp. maple syrup
2 tbsp. pure pumpkin puree
1/2 cup coconut drink, such as Coconut Dream
