Oatmeal Chocolate Chip Cookies - Gluten Free, Top 8 Free

Homemade oat flour is so simple, quick, and inexpensive to make at home. I make big batches of it so that I have it on hand when I need it.

Ingredients
2 ripe bananas
1/2 tsp pure vanilla extract
1/2 cup lard
1/2 cup brown sugar
1 tsp cinnamon
a pinch of salt
1 1/4 cups purity protocol gluten free oat flour
1 cup purity protocol gluten free rolled oats
1 tsp baking powder
1/2 tsp baking soda
1/3 cup chopped Enjoy Life chocolate chunks
Add the bananas, vanilla, lard, and brown sugar to a medium mixing bowl and beat until smooth. Add the cinnamon, salt, oat flour, oats, baking powder, and baking soda and fold until it forms a dough. Fold in the chopped chocolate. Cover the dough and let rest in the fridge for an hour.
Preheat the oven to 375F and line a baking sheet with parchment paper.
Form the chilled dough into balls using a tbsp measurement as your guide. It should make about 25 cookies. Spread the cookies out an inch apart on the baking sheet, and gently press down with your fingertip in the center. You will have to do this in 2 - 3 batches depending on the size of your cookie sheet.
Bake for 8 - 10 minutes, or until crispy on the edges and golden brown all over.
