5-Minute "Nice Cream" Breakfast Smoothie Bowls
Do you dream of waking up to a big bowl of ice cream? So do I! That’s why I’m such a big fan of nice cream, a purely frozen banana-based sorbet. Blending the frozen banana pieces creates a rich, thick, and creamy dairy-free sorbet, that’s made entirely in your blender. Once you’ve made the base once or twice, try mixing it up with fresh berries, citrus, and other delicious and healthy flavors. This takes smoothie bowls to a whole new level.
Free from: peanuts, nuts, dairy, soy, egg, wheat, fish, shellfish
Strawberry Banana
Ingredients
2 bananas
1/3 cup loose raspberries or strawberries
1/3 cup blueberries
1 tbsp. honey
1 tbsp. lemon or lime juice
1 tsp chia seeds
1 tbsp. Sunbutter
1 tbsp. large flake or steel cut oats
Chop the bananas and strawberries into small chunks. Freeze all the fruit overnight. Arrange the pieces to freeze in a single sheet, as opposed to one big clump. This will make them easier to blend.
Take the fruit out of the freezer about 15 minutes before you’re ready to make breakfast. Add the fruit, maple syrup, and citrus juice to a blender or food processor and pulse until thick and smooth. It will take several minutes. You may have to pause and scrape the sides of the blender with a spoon to ensure all the chunks blend evenly.
Scoop the nice cream into two bowls. Top with the seeds, Sunbutter, oats, and some extra berries. Enjoy it nice and cold.

Mixed Berry
Ingredients
5 strawberries
2 bananas
1 tbsp. maple syrup or honey
1 tbsp. lemon juice
a handful of blueberries for garnish

1/4 tsp ground cinnamon
Chop the bananas into small chunks. Freeze the bananas and blueberries overnight. Arrange the pieces to freeze in a single sheet, as opposed to one big clump. This will make them easier to blend.
Take the fruit out of the freezer about 15 minutes before you’re ready to make breakfast. Add the fruit to a blender or food processor and pulse until it resembles frozen crumbs. Add the maple syrup and cinnamon and blend until it’s thick and creamy. It will take several minutes. You may have to pause and scrape the sides of the food processor with a spoon to ensure all the chunks blend evenly.
Scoop into two bowls and garnish with fresh blueberries.
Serves 2
Blueberry Black Carrot
1/3 cup frozen blueberries
1 1/2 cups sliced, frozen bananas
1/4 cup diced black carrot
1 tbsp maple syrup
Take the frozen fruit out of the freezer about 15 minutes before you’re ready to make breakfast. Add all of the ingredients to a blender or food processor and pulse until it is thick and creamy. Begin pulsing, then turn to blending when it starts to break up. This will take several minutes. You may have to pause and scrape the sides of the food processor with a spoon to ensure all the chunks blend evenly.
Scoop into a bowl (or 2) and garnish with frozen blueberries
