With back to school season now in our midst, it's time to start thinking about really simple lunch ideas. Whether you have kids going to school, or you are a student attending post-secondary, you need quick, easy, and inexpensive recipes to get you through the fall. When I was a kid, tuna salad was one of my favorite lunches and I still make it often today. Instead of using bread, I've loaded it into a red bell pepper for added nutritional value and crunch.
Free from peanuts, nuts, dairy, soy, egg, wheat, shellfish
Gluten-free, if using a GF mustard
Ingredients
1 bell pepper
1 single serving tin of tuna packed in olive oil
1 tsp capers
1 tsp Dijon mustard
2 tbsp. finely diced cucumber
Slice the pepper in half and set aside. Mix all the salad ingredients together and spoon into the pepper. Seal up in a container for lunch the next day, or eat it right away.
