Bittersweet Apricot and Radicchio Salad
An intensely colourful salad comprised of bitter, sweet, crunchy, and soft seasonal produce. The combination of bitter and sweet flavors meld so beautifully. This salad looks like a work of art, but the artistry really lies in its simplicity.
The cupped shape of radicchio lends itself well to personal servings, making this salad a great appetizer or snack for a group.

Ingredients for Bittersweet Apricot and Radicchio Salad
1 ripe apricot
1/2 head of radicchio
1/3 cup shaved fennel
1 tbsp pulled fennel fronds
a handful of blackberries
1 1/2 tbsp good olive oil
1 tbsp organic honey
flaky sea salt to taste
How to make Bittersweet Apricot and Radicchio Salad
Lay the leaves of radicchio out on a dinner plate. Shave the fennel with a vegetable peeler or a mandolin, and lay it over top. Sprinkle on the fennel fronds, apricots, and blackberries. Drizzle the olive oil evenly over everything, followed by the honey, and flaky sea salt.
