Calling all oatmeal and granola lovers! This chewy one pan baked oatmeal is the perfect breakfast, snack, or lunch recipe, and is made with one of the best nut free brands out there; Sunbutter Sunflower Seed Butter! The original sunflower seed spread and my favorite alternative to peanut butter or nut butters. Sunbutter has 7g of plant based protein per serving, and a whole lot of creaminess and flavour.

I made this recipe “one pan” because let’s face it - no one wants to do extra dishes at breakfast or when they’re making an easy snack. I also chose to do a baked oatmeal rather than overnight oats because… I despise cold oatmeal! I have never been a fan of overnight oats. I gave it a fair shot a while ago but just couldn’t get around the temperature. I don’t love iced coffee either, if you’re wondering. Both coffee and oatmeal should be served hot IMO.
This recipe is ideal for anyone who loves granola, Sunbutter, or oatmeal, and is seeking a combination of the three. You are welcome to use any variety of Sunbutter for this recipe, though I prefer to use the Original as pictured above. If making this sugar free, use the unsweetened Sunbutter and omit the brown and turbinado sugars from the recipe.
Ingredients for One Pan Chewy Baked Oatmeal - Nut and Peanut Free, Dairy Free, Soy Free, Egg Free
1/2 cup Sunbutter variety of your choice
1 ripe banana, mashed
1 tsp pure vanilla extract
1/4 cup packed brown sugar or maple syrup
1/4 tsp sea salt
2 cups gluten free certified oats
1 tsp ground cinnamon
1/2 tsp ground decorticated cardamom
1/2 pint fresh blueberries
2 black plums cut into eighths
1 packet or 1 tbsp of turbinado sugar
How to make One Pan Chewy Baked Oatmeal - Nut and Peanut Free, Dairy Free, Soy Free, Egg Free
Preheat the oven to 350F.
Add all of the ingredients, excluding the fruit and turbinado sugar, to a baking dish and mash together until the oats have formed clumps.
Toss in the fruit and mix well.
Sprinkle the turbinado sugar on top. Bake for 25 minutes, then broil for 2 minutes.
