S'mores Cookie Bake, with Sunbutter! - Dairy Free, Nut Free, Peanut Free
This recipe is for those who loves s’mores but do not have access to a campfire on any given day. For the people who want to eat a freaking toasted marshmallow any time they please!! What makes it better than s’mores is the addition of Sunbutter Original Sunflower Seed Butter, a creamy, earthy, “nutty” (without the nuts) spread. When making a sweet treat I often like to add a protein source to balance out the sugar. My body appreciates it.
This recipe is efficient, ready in just minutes, and perfect for families or friends to make together and share. As my mom said when she and I performed a taste test – “No plates required! Just put it in the middle of the table with a bunch of spoons.”
The layers of crunched up cookies, Sunbutter, chocolate, melted marshmallow, and toasted marshmallow make this dessert super scoopable and casual. You can spoon it into cups for a mingling snack or dessert.

Use your favorite allergy-safe cookies that your family is most comfortable with and enjoys
The cookies can be crunchy or soft. If using a crunchy cookie, leave the pieces somewhat chunky as opposed to demolishing them down to dust.
The flavours that work best are graham crackers (s’mores classic pairing), chocolate chip, or double chocolate.
What type of Sunbutter to use:
Use any of the creamy Sunbutters – if you prefer your desserts to be less sweet then use the unsweetened variety.
While I love Crunchy Sunbutter, the texture of the creamy varieties works better in this recipe.
Ingredients for S'mores Cookie Bake, with Sunbutter! - Dairy Free, Nut Free, Peanut Free
1/2 cup Original Sunbutter Sunflower Seed Butter
3/4 cup allergy Free Chocolate chips (I used Enjoy Life Foods Dark Chocolate Morsels)
20 - 25 large marshmallows*
one package of your favorite allergy-free cookies (I used 170g), or enough to cover the bottom of an 8 inch pie plate

How to make S'mores Cookie Bake, with Sunbutter! - Dairy Free, Nut Free, Peanut Free
Preheat the oven to 375F.
Crunch up the cookies and line the bottom of the pie pan.
Sprinkle the chocolate chips evenly over top.
Dollop the Sunbutter on top and spread it around. It doesn’t have to be perfect.
Place the marshmallows on top with the circular side facing up.
Place the pie pan in the preheated oven for 5 – 6 minutes to allow the marshmallows to puff up and become softened inside.
Turn the oven to broil and keep a close eye on the bake for about 1 minute, or until they are toasted to your liking.
