Making your own crackers at home is as easy as whipping up a quick dough, flavoring it with your desired spices and seasonings, rolling it out, cutting it, and crisping the dough to perfection. Believe it or not, all of this can happen within 30 minutes, making crackers one of the fastest and easiest savory carbs to whip up at home.
My inspiration for this recipe came from the spelt flour lavash crackers that I buy all the time from the grocery store. The dough is so thin and crisp, and beautifully flavored from the spelt grin. I decided to try making them at home, and thanks to the mass social media and network outages recently, I was able to test the recipe many times without any distraction! It’s the simple things. Ultimately I settled on rosemary and garlic as my flavor of choice, but I also quite liked the BBQ spiced crackers for dipping into salsa. There are so many flavor combinations you can create for your own Easiest Spelt Flour Crackers. Cinnamon sugar for a sweet variation, multi-seed, lemon zest and black pepper… the list is endless. Ingredients for Easiest Spelt Flour Crackers Ready in 30 Minutes- Dairy Free, Egg Free, Soy Free, Nut and Peanut Free
1.5 cups Hockley Valley Spelt Flour
1 tsp sea salt
1 tsp cracked black pepper
1 tbsp. honey
2 tsp finely chopped fresh rosemary
2 tsp grated or pressed garlic
3 tbsp. olive oil, divided
1/2 cup water
For BBQ Flavour, omit the rosemary only and instead add:
1/4 tsp ground turmeric
1/2 tsp ground coriander seed
1 1/2 tsp paprika
2 tsp tomato paste
1 tbsp. more of spelt flour to the flour mixture (to counteract the added moisture of the tomato paste)
How to make Easiest Spelt Flour Crackers Ready in 30 Minutes- Dairy Free, Egg Free, Soy Free, Nut and Peanut Free
Preheat the oven to 450F.
Whisk together the Hockley Valley Spelt Flour, sea salt, and black pepper in a large bowl.
Make a well in the center and add the honey, rosemary, garlic, 2 tbsp. olive oil, and water at once. Use a whisk to combine the ingredients in the well together, then slowly start bringing in the dry ingredients from the edges until the mixture has come together into a rough ball of dough.
With clean hands, knead the dough for 15 folds. This is important for creating flaky layers within the crackers.
Turn the dough out onto a sheet of parchment paper and roll into a 25 cm x 35 cm (roughly 10 in x 14 in) rectangle. Brush the remaining 1 tbsp. of olive oil over the dough. Poke the dough all over with a fork, then cut into crackers of whatever size you prefer. I cut mine into 26 crackers (4 rows of 6 crackers each).
Transfer the sheet of parchment paper to a baking sheet.
Place the baking sheet in your preheated 450F oven and bake for 16 - 18 minutes or until crispy and golden brown. Keep a close watch on them for the last couple minutes to be sure they don’t burn.
