Cinnamon Buns - Without Yeast!
So you are stuck at home, out of yeast, unable to find any yeast at the grocery store, and you want to bake cinnamon buns. Here’s the recipe for you!
Ingredients
2 cups spelt flour
2 tsp baking powder
4 tbsp powdered sugar, divided
a pinch of salt
1/4 cup lard
1/2 cup water
1/3 cup unsweetened applesauce
1/4 tsp pure vanilla extract
1 tbsp ground cinnamon
Topping:
1/2 cup powdered sugar
1/4 tsp pure vanilla extract
1 tbsp water
Preheat the oven to 410F and line a 8 x 8 inch square baking dish or cake pan with parchment paper.
Add the flour, baking powder, 2 tbsp of powdered sugar, and salt to a medium mixing bowl and mix well. Cut the lard into the flour using a fork, until it has formed small, pea-sized balls. Make a well in the center and pour the water in. Mix until it comes together into a rough ball of dough.
Turn the dough out onto a sheet of parchment paper, or a clean counter dusted with flour. Knead the dough ten times to form layers that will take shape as the rolls bake. Roll the dough into a roughly shaped rectangle, about 15 inches x 8 inches wide.
Add the remaining powdered sugar, applesauce, cinnamon, and vanilla to a small bowl and mix until well combined. Spread it out evenly over the dough. Then, roll the dough up along the long edge, firmly, so as to prevent air pockets, until you have one long log of cinnamon roll. Cut into 1 1/4 inch wide rounds. Place the rounds face up on the lined baking sheet, about a half inch apart. Bake for 12 - 15 minutes, until lightly browned around the edges. They should puff up so the edges are touching each other.
For the topping, mix together the powdered sugar, vanilla, and water until smooth. Drizzle over top of the warm cinnamon rolls.
Serve warm
