Mocha Mousse Bowl

Smoothie bowls have had their time. Now it's time for a dessert bowl. And believe it or not, this recipe is pretty healthy. Try preparing in small bowls if you're serving a group.

Free from dairy, nuts, peanuts, egg, wheat, oats, sesame, fish, shellfish, citrus, mustard. Vegan

Ingredients
1 cup Enjoy Life chocolate chips
1/2 cup brewed coffee (I use Starbucks Sumatra blend)
2 tbsp. rice dream
1/2 tsp vanilla extract
2 tbsp. Earth Balance organic whipped spread or coconut oil
1 banana
your favorite berries and seeds

Method

Melt the chocolate, coffee, rice dream, vanilla, and earth balance in a double boiler over low heat, stirring constantly until everything is well combined and shiny. Pour the chocolate mixture into a blender along with one banana. I like to break the banana up into chunks first. Pulse until smooth, about 1 minute. Pour into bowls and dress up with berries and seeds. I used flax seeds. You can eat it warm or let it set in the fridge which will give it more of a mousse-like consistency.
