Decadent Gluten Free, Top 8 Allergen Free Chocolate Cake

This gluten free, top 8 allergen free chocolate cake is incredible - moist, rich, decadent, and chocolaty. Made with gluten-free oat flour, not legume or nut flours which are so common in wheat free recipes. This cake is great when served warm, but it’s even better made the day ahead. Just return it to the glass baking dish and cover with aluminum foil.

Tip for slicing: Wait until the cake has reached room temperature. Pull the whole thing, parchment paper and all, out of the baking dish and transfer to a cutting board. Heat a flat edge knife with hot water and dry off with a kitchen towel. Slice downward into the cake and avoid dragging the blade. This will give you the cleanest cut.

Substitutions: Ripe, blackened bananas work best in this recipe, however you can use unsweetened applesauce if you do not have banana. 1/3 cup per banana substituted.

Peanut free, nut free, coconut free, dairy free, soy free, egg free, wheat and gluten free, fish and shellfish free

Ingredients
1/2 cup avocado oil, or a neutral oil such as canola or sunflower
1/2 cup maple syrup
1/2 tsp pure vanilla extract
2 ripe bananas
4 tbsp brown sugar
1/2 cup melted Enjoy Life chocolate
1/2 cup water
4 tbsp cocoa powder
2 cups oat flour
1 tsp baking powder
1/2 tsp baking soda
pinch of salt

Add the avocado oil, maple syrup, vanilla, banana, brown sugar, and water to a food processor or mixer and pulse until completely smooth and liquified. There should be no chunks of banana. Add the melted chocolate and cocoa and pulse until smooth. Add the oat flour, baking powder, baking soda, and salt, and pulse until smooth. The batter should have a light, airy, and smooth texture. 

Pour into a standard 10.5 inch x 6.5 inch baking dish lined with parchment paper and smooth out with a spoon. Bake at 375F for 20 - 25 minutes, or until a toothpick comes out with minimal crumb (emphasis on crumb, not raw batter). It should not come out completely clean as that would indicate that the cake is overcooked.

Glaze:
1/2 cup powdered sugar
1 tbsp cocoa powder
2 tbsp water
1/4 tsp vanilla

Add all of the ingredients to a small bowl and whisk well. Drizzle over the cake while still warm.
