The Best Vegan Pancakes
There's nothing I love more on a weekend morning than whipping up a batch of fluffy pancakes. I stumbled upon this recipe by accident when I was out of eggs, and after a bit of experimenting this is what I came up with. I like to serve mine with some quickly fried bananas and a sprinkle of ground cinnamon and maple syrup.
Ingredients
1/2 tsp baking soda
1 tsp baking powder
a pinch of salt
1 tbsp sugar
1 1/2 cups all purpose flour
~1/4 cup applesauce
~1/2 cup water
Method
1. Combine all the dry ingredients together and make a well in the centre.
2. Add the applesauce and water and begin pulling in the dry ingredients, mixing well until all ingredients are combined. The batter will be a little lumpy and kind of foamy from the baking soda.
3. Add some sunflower, coconut, or vegetable oil to a non-stick pan on medium heat. Let the oil heat up for a moment and then begin adding the batter, about 2 - 3 tbsp per pancake. It's time to flip them when bubbles start popping up and leaving marks in the pancake.
4. Transfer to a plate and dress with lots of cinnamon and pure maple syrup!
Remember, with pancakes the first batch is always the worst! But your second batch will be awesome.
