Celebrate Canada Day with Local Produce
What a beautiful pastry eh?
I'm celebrating Canada Day up at my cottage with my family and relatives. My mom was born here but my dad was not, and they both call this country home. What a great place to live. To get in the spirit of the holiday I made a galette using locally farmed peaches and strawberries which are both in season now. Ontario berries are generally quite small and delicate but bursting with flavour.
This recipe does not call for any dairy, nuts, peanuts, citrus, fish, shellfish, oats
Ingredients
2 cups of all purpose flour
1 cup of Earth Balance or coconut oil, shortening, or lard
1/4 cup sugar + 1 tbsp of sugar for later
1/4 tsp salt
2 tsp baking powder
1/2 cup cold water
2 egg yolks (or 3 tbsp. apple sauce)
about 6 - 8 medium-sized peaches
a handful of Ontario strawberries
Method
Combine all the dry ingredients in a large bowl. Add the Earth Balance and mash with a fork until it forms little pea-sized bits. Make a well in the centre and add the yolks and water and mix until all ingredients are well combined and there are no streaks of yellow.
When it forms a ball turn the dough out onto a sheet of parchment paper and knead it about 10 times until it is smooth and has formed into a solid ball. Flatten into a disc and wrap in parchment paper or plastic wrap, then refrigerate for 5 hours.
Preheat oven to 400F. Once chilled, dust the dough with flour and roll into a large oval shape, about 1/2 cm thick. Slice up the fruit and pile it into the middle of the pastry. Fold the sides up over the fruit and then brush with the remaining egg white. Sprinkle a tbsp of sugar over the edges of the pastry to add some crunch. It's a good idea to assemble the galette on a sheet of parchment so that you can easily pick it up and transfer to a baking sheet.
Bake for about 35 - 40 minutes, until the fruit is softened and the pastry is golden brown. Allow to set and then slice into wedges. Serve for breakfast, with coffee or tea, as a snack, or for dessert.
