Spicy Pineapple Sauce
My spicy pineapple sauce will instantly jazz up beef, chicken, pork, or fish. A little sweet and a little spicy, it’s an easy weeknight recipe that you can add to any simple protein. Toss it together with pulled meats or poultry, add to a stir fry, or dollop on top of grilled protein. In the picture below, I tossed it with some pulled beef that I had meal-prepped for the week. It took my simple stewed beef to a whole new level.
Ingredients for Spicy Pineapple Sauce
2 cups peeled, cored, died pineapple
1/3 cup water
1/2 tsp ground ginger
2 tsp roughly diced garlic
1 tsp sesame oil or flaxseed oil (optional)
1/4 cup lemon or orange juice
2 tbsp. honey
sea salt to taste
1/2 tsp chili flakes, or to your spice preference
How to make Spicy Pineapple Sauce
Add all of the ingredients to a medium saucepan and stir well. Bring to a low boil, then turn to medium heat and let stew for 15 - 20 minutes with the lid on, stirring often. After 20 minutes the pineapple should be softened. Remove the lid and turn up to medium high heat. Stirring often again to prevent sticking, allow to cook down and become thick and sticky. This should take 5 - 8 minutes.
The final step is to blend it all together. To do this, you can use an immersion blender, or you can transfer the mixture to a food processor that has a hot setting. Blend until smooth.
Add more chili flakes to taste.
