Zesty Potato Salad - Egg Free, Dairy Free
This beautiful summery potato salad is made with tons of fresh herbs and delicious flavorings. It’s so simple, and sure to be a favorite for those who can’t have egg or dairy, who don’t care for mayo, or who just love a tasty potato salad!

*Some Dijon mustards contain gluten. Be sure to use a whole grain Dijon mustard that is gluten free
Ingredients for Zesty Potato Salad - Egg Free, Dairy Free
6 cups Yukon Gold or yellow potatoes, skins on, diced into one inch cubes
1 tbsp lemon juice
1 tbsp apple cider vinegar
2 tbsp grainy Dijon mustard*
1/4 cup olive oil
1/2 tsp sea salt
1/4 tsp black pepper
1 clove of garlic, finely chopped
1 shallot, finely diced
3/4 cup chopped fresh dill
How to make Zesty Potato Salad - Egg Free, Dairy Free
Boil the potatoes until fork tender, about 15 - 18 minutes. Drain the cooked potatoes and rinse with cold water to remove the excess starch, and to stop the cooking process. Set the potatoes aside to cool.
Add the lemon juice, cider vinegar, Dijon, olive oil, sea salt, and black pepper to a bowl and whisk well.
When the potatoes have cooled, add them to a mixing bowl along with the dill, garlic, and shallot. Pour the dressing over top and mix until well combined. Adjust the seasoning to taste.
Store in the fridge until ready to serve
