Sunflower and Fig Breakfast Oats

Sunflower and Fig Breakfast Oats are so incredibly flavorful. I find I tend to get stuck in a rut of repetitive flavor combinations - chocolate chip with raspberries, apple chunks with cinnamon, chunks of banana with chocolate chunks. It can get a bit boring, and sometimes a bit too sweet. No matter what flavor of oats I’m preparing, I seem to always top it off with a heaping spoon of Sunbutter. I like the salty taste, and that creamy texture.

So for this recipe, I thought, why not swirl the Sunbutter into my oats? And then scoop more on top :)

These oats are lightly sweetened with a bit of honey. The dried figs on their own are quite sweet, so I like to use the “no sugar added” Sunbutter for this recipe.

What a beautiful way to start the day!

Ingredients
2 cups coconut milk or your favorite allergy safe milk
1 cup gluten-free rolled, quick, or steel cut oats
1 tbsp honey or maple syrup
4 tbsp Sunbutter No Sugar Added Sunflower Butter
1/2 tsp cinnamon, plus a little extra for dusting
1/4 tsp cardamom, plus a little extra for dusting
5 dried figs, sliced, diced, or halved

Add the milk alternative, oats, and honey to a sauce pan and mix well. Simmer on medium heat for about 5 - 10 minutes, stirring constantly. The timing will depend on the type of oats you use; quick oats will be ready in about 5 minutes, whereas rolled or steel cut oats will take up to 10 minutes. You’ll know the oats are ready when they are puffy and soft, and most of the liquid has been absorbed.

Add half of the Sunbutter, cinnamon, and cardamom, and mix well. Simmer for another minute to heat the Sunbutter through.

Pour into two bowls. Decorate the top with a dash more of milk alternative, a sprinkle each of cinnamon and cardamom. Scoop 1 tbsp more of Sunbutter onto each bowl of oats, and arrange the figs on top.

Serve hot. Serves 2
