Fast and Simple Chocolate Biscuits
I came up with this recipe out of the desire to eat something chocolaty and fudgy in a hurry, without sacrificing taste or texture. They're best when eaten warm, split open with a knife, with Enjoy Life chocolate chips sprinkled on top. Enjoy with your afternoon tea.
Free from peanuts, nuts, dairy, egg, soy, fish, shellfish, coconut
1 1/4 cups all purpose flour
1/4 cup cocoa powder
1 tbsp sugar
a pinch of salt
1/4 cup Enjoy Life mini chocolate chips
1/4 cup olive oil
1/3 cup water
Preheat the oven to 400F and line a baking sheet with parchment paper.
Add the flour, cocoa powder, sugar, salt, and chocolate chips to a large mixing bowl and whisk well, breaking up any clumps of cocoa powder. Drizzle the olive oil around the dry ingredients and then let it sit for a moment so it can be slightly absorbed. This helps it coagulate into little clumps throughout the dough.
Fluff the mixture around with a fork until you can't see the oil anymore, then make a well in the center. Pour the water in and mix well until it forms a clump. Knead the dough 10 times within the bowl, using the heel of your hand. There's no need to turn it out onto a floured surface; these are hurried biscuits after all.
Flatten the dough out onto the lined baking sheet and cut out 3 biscuits using the rim of a small juice glass. Shape the remaining dough into a disc. Bake for 8 minutes. They should be nice and dark and gooey. Serve warm.
